Rasmalai Recipe is a famous Pakistani dessert consisting of soft paneer balls in chilled creamy milk. Like Rasgullas, Recipe of rasmalai is soaked in sweet, flavored milk. Rasmalai recipe is an ideal sweet dish for all occasion.
Powdered Milk — 1 cup
Baking powder — 1 tsp slightly heaped
Flour –- half tbsp leveled
Eggs — 1
Desi ghee — 1 tbsp Melted or any oil
For Milk Syrup:
Fresh Milk——————- 1 liter
Sugar———————— 1 cup
Green cardamom————- 6 – 8
Step 1: Take fresh milk, sugar and cardamom in a pot and boil it once and then leave it on low flame for 10 minutes, no need to reduce the milk.
Step 2: In a separate bowl Mix together powdered milk, flour and baking powder.
Step 3: Now add melted ghee or oil and mix with hands again.
Step 4: Beat an egg in a cup and add it to the the powder mixture.
Step 5: Knead with light hand till it forms a ball shape. Just slightly mix or assemble everything together using light hand..Donot ever add even a drop of water, if the dough is dry add 1 tbsp of milk but No Water.
Step 6: Make small balls on ur palm and flatten them by pressing with your thumb. and be careful, not to place them outside for more than 10 minutes.. as soon as u knead and make balls , immediately put the balls in the syrup otherwise the ball would get hard .
Step 7: Gently put the ball into the hot or boiled milk syrup which is still on flame.
Step 8: Once you add the balls, set the stove on high flame for about 3-4 minutes and then keep the flame on slow till they are fully cooked i.e for about 10 -15 minutes and then leave them on slightest flame (Dum) for 3 – 5 minutes further more to remove any chances of uncooked or hard center.
